Blueberry Protein-Rich Pancakes
There is nothing more comforting than waking up to a batch of pancakes. Gone are the days of pancakes that just deliver carbohydrates, now we can have an adult version of our childhood favourite that is protein-rich. Using a whey based protein powder will give you a better consistency than vegetarian powders. These pancakes will help you perk up and fuel up!
- 1 scoop of your favourite protein powder ( one of our favourites is fermented Greek yogurt proteins+)
- 1/2 cup flour
- 2 large eggs
- 1/2 medium banana
- 2 tsp baking powder
- 1/2 cup blueberries
Mix all of your dry ingredients together in a large bowl.
Then mash up your banana with a fork until it is a mushy paste. Mix banana mush with eggs until they are blended together. Mix wet and dry ingredients together until smooth. Toss in blueberries and mix.
Place a skillet over medium-high heat and measure out about 1/8 cup batter per pancake.
