Ingredients

2 cups organic whole-wheat pastry flour

1 Tbsp non-aluminum baking powder

1 tsp baking soda

1 tsp ground cinnamon

1/2 tsp Eden Sea Salt

1/4 tsp ground nutmeg

1/2 cup walnuts, coarsely chopped

1/3 cup Eden Dried Montmorency Cherries, chopped (or any Eden Dried Fruit)

1 cup Eden Organic Apple Sauce or Eden Apple Strawberry Sauce or Eden Apple Cherry Sauce

1/2 cup Edensoy Extra Vanilla

1 Tbsp Eden Organic Apple Cider Vinegar

2 Tbsp Eden Organic Safflower Oil

1/3 cup organic maple syrup

Directions

Preheat oven to 375 degrees. Lightly coat muffin tin with oil. In a large bowl, combine the first eight ingredients. In a medium bowl, combine the Edensoy and vinegar. Add the applesauce, oil and maple syrup to the Edensoy and vinegar mixture. Stir the wet ingredients into the dry. Fill muffin tins three-quarters full. Bake 20 minutes or until a toothpick comes out clean.
