Domatcha’s Summer Harvest is collected in the late summer instead of the spring. This late harvest makes the Matcha higher in catechins, which gives it an earthy and astringent taste.

When DōMatcha harvests and cultivates their tea, each step is carefully performed in the Japanese way, to persevere the rich flavour and freshness. The tea is shade-grown and the leaves are carefully chosen. The leaves are then steamed to prevent oxidization immediately after harvesting. The Matcha is stored in zero degree facilities, to be kept fresh all year long.
Before the leaves are ground, the stems and rough fibres are removed. This reduces the bitter flavour. The leaves are then ground by granite stones to prevent “burning” of the powder. The Matcha is packaged in a sealed foil bag and sealed tin. This is very important because light and air cause the Matcha to lose it’s nutrients and flavour.
