IT isn’t just Popeye who can benefit from this versatile vegetable, often referred to as a “superfood”.

It can be used raw in salads and sandwiches, stirred into pasta dishes or steamed as an accompaniment to meat and fish meals.

Spinach is a rich source of vitamin A, C, E, K, magnesium and several vital antioxidants, which are thought to protect against cancer-causing free radicals.

It is also an excellent source of fibre and omega-3 fatty acids.

To maintain spinach’s “superfood” status and its nutrients, eat raw or lightly steamed.

It can also be hidden in dishes such as pasta bakes and vegetable lasagne, to make sure fussy eaters are one step closer to their five a day.
