FENNEL has a similar nutritional content to celery and is also a good treatment for stomach upsets.

It has an excellent quantity of iron, is high in calcium and offers a very impressive supply of the following vitamins: carotene, folic acid and vitamin C. Several parts of fennel can be used in cooking, including the bulb and seeds.

The aniseed-flavoured bulb adds a subtle dimension to meat, fish and vegetable dishes and can be cooked in a variety of ways.

Either cut into very thin slices and use in salads raw, or boil, steam or roast.

The aniseed flavour is quite powerful, but lessens with cooking.

It contains 27 calories per serving, virtually no fat and 11% of the recommended daily amount of fibre.
