In the battle of the bulge, soul food often wins. However, there are ways to make dishes healthier without giving them up completely, according to Nicole Rhoads, a registered dietitian at St. Joseph Medical Center in Bern Township.
Some of her nutrition tips:
Use smoked turkey to flavor dishes; it has less fat and salt than fatback or other pig parts.
Use vegetable oil or canola oil instead of lard.
Decrease salt by using other seasonings, including basil, vinegar, garlic, cilantro, ginger, onion, lemon and curry powder.
Eat smaller portions.
