ADD spinach to your egg salad sandwich to boost your eyesight. SPINACH is a good source of vitamin A and lutein, which are known to be good for the eyes — helping to prevent cataracts and age-related macular degeneration.

Vitamin A and lutein are fat soluble, which means if you eat spinach with fat — such as mayonnaise or olive oil — your body will absorb these nutrients better.

The eggs in the mayonaise also contain vitamin A and lutein, giving an extra boost to your eye-protection.

Cooking reduces lutein content, so eating a raw spinach salad with egg salad will maximise your intake. You could also try a hard-boiled egg and spinach salad, making sure you add an oil based dressing to ensure there is maximum absorption of the nutrients.
